Formulating your own brewing recipes starts with understanding three things: style guidelines (target gravity, color, bitterness, and character), ingredient function (what each malt, hop, and yeast contributes), and the math that connects them (how to calculate OG, IBU, SRM from your ingredients). Once those are clear, building a recipe is systematic. You’re making informed choices within a framework, not guessing.

Start with style targets

Every BJCP or BA style has defined ranges for original gravity (OG), final gravity (FG), IBU, SRM (color), and ABV. These aren’t arbitrary, they reflect what the style tastes like. Building to those targets gives you a recognizable, balanced beer. The ranges are wide enough to express your preferences while staying in style. For an American Pale Ale: OG 1.045–1.060, FG 1.010–1.015, IBU 30–50, SRM 5–10. For a Dry Irish Stout: OG 1.036–1.044, FG 1.007–1.011, IBU 25–40, SRM 25–40.

Grain bill construction

Most grain bills follow this structure: base malt (80–95% by weight, provides fermentable sugar and most of the beer’s body), specialty malts (5–20%, adds color, flavor, and character), and adjuncts (optional, 0–20%, flaked grains for body, sugar for dryness and gravity).

Crystal malt is the most commonly misused ingredient in homebrew recipes, too much (over 15%) creates excessive sweetness and a cloying, unfermentable residue. For most styles, 5–8% Crystal 40 or 60 is enough to add body and color without overshooting.

Calculating OG from your grain bill

Each malt has a potential gravity contribution measured in gravity points per pound per gallon (PPG). 2-Row pale malt: ~37 PPG. Crystal 60: ~34 PPG. Roasted barley: ~25 PPG. To calculate expected OG:

OG = (Sum of [lbs × PPG]) × Efficiency / Gallons

Hop bill: calculating IBU

IBU (International Bitterness Units) is calculated from hop alpha acid content, weight, utilization (based on boil time), and batch volume. The Tinseth formula is the standard used by most calculators. Practically, what you need to know:

  • 60-minute additions, Maximum bitterness extraction, minimal aroma. Use for bittering in balanced or malt-forward styles.
  • 15-minute additions, Mixed flavor and bitterness. The most versatile addition point for flavor hops.
  • 0-minute / whirlpool, Mostly aroma, some bitterness depending on temperature and time held. Critical for modern hop-forward styles.
  • Dry hop, Zero IBU contribution, pure aroma. Added after fermentation.

1 oz of Cascade (6% AA) at 60 minutes in 5 gallons gives approximately 30 IBU. 1 oz of Citra (12% AA) at 60 minutes gives approximately 60 IBU. Always verify with a calculator for your specific hop lot, AA% varies by harvest year.

Yeast selection and its effect on final character

Yeast choice affects attenuation (how dry the beer finishes), flocculation (how clear it gets naturally), and ester/phenol production (flavor compounds from fermentation). For a clean American Pale Ale, Safale US-05 or Wyeast 1056 (American Ale) at 65–68°F/18–20°C produces a very neutral, clean fermentation that lets the hops lead. For an English Bitter, Wyeast 1968 (London ESB) at 64–68°F adds the stone-fruit, biscuity ester character that defines the style. Flipping to a Belgian saison yeast (Wyeast 3724 or Safale BE-134) on the same grain bill produces a completely different beer. Common Questions

How do I scale a recipe from 5 gallons to a different batch size?

Scale all grain and hop weights proportionally: multiply every ingredient weight by (new batch size / original batch size). A 5-gallon recipe scaled to 10 gallons doubles every ingredient. Water chemistry mineral additions scale the same way. Yeast pitch rate scales with volume, double the yeast for double the batch. The only exception is boil-off rate: if you’re using the same kettle, your boil-off per hour stays constant regardless of batch size, which affects pre-boil volume calculations. Recipe calculators handle this automatically when you change the batch size field.

My first recipe came out too sweet and not bitter enough. What went wrong?

The two most common causes: too much Crystal malt (over 10% of grain bill) leaving unfermentable residual sweetness, and under-hopping relative to the gravity. If OG is 1.055 but you only hit 20 IBU, the beer will read as sweet even if fermentation was complete. Check your recipe against the BJCP style targets, if your IBU:OG ratio (BU:GU ratio) is below 0.5 for a pale ale, you’re under-bittered. Also check that fermentation actually finished: a stuck fermentation stopping at 1.025 instead of 1.010 reads as very sweet regardless of the recipe. Take a gravity reading with a hydrometer to confirm.

Should I adjust my recipe if my homebrew shop has different malt brands available?

For base malts, differences between UK maltsters (Crisp, Thomas Fawcett, Simpsons) and American maltsters (Briess, Rahr) are small, PPG and color are similar, subtle flavor differences are present but minor. For specialty malts, stick to the same Lovibond rating (color °L) if substituting: Crystal 40L from any maltster will perform similarly. The bigger variable is freshness, malt crushed more than a week ago has measurable enzyme degradation and oxidation. Buy fresh and crush close to brew day regardless of brand.
