The recipe lab

Brew a beer from an empty kettle.

The lab walks through a brew day one decision at a time: water, grain, mash, sparge, boil & hops, chill, ferment, condition, taste. Each step says what you would physically do and why it changes the beer.

Three of the stages

  • Fill and heat the water

    Water

You fill a pot with your brewing water.

  • Close the lid

    Mash

You tip the crushed grain into the hot water — in a mash tun, which is just an insulated vessel with a tap — stir the lumps out, put the lid on and walk away for an hour.

  • Pitch the yeast

    Ferment

You sprinkle the yeast on top, seal the lid with an airlock, and put the bucket somewhere the temperature does not swing.
