Temperature and mass

Read the specification.
Then test the setup.

A thermometer’s range, accuracy and response time are separate properties. A scale’s capacity, readability and accuracy are also separate. Choose enough range first, then check repeatability where you will use the device.

Thermometer rule

Probe placement is part of the measurement.

Record insertion depth, location, stirring state and time to stabilise. A fast display cannot fix a probe sitting in a hot or cold pocket.

Scale rule

Tare hides the display load, not the physical load.

Include the bowl or container when choosing capacity. Fine display steps are useful only when the device repeats reliably at the ingredient masses you use.

Fast spot temperature checks

Thermapen ONE

ThermoWorks

You need a fast immersion or spot reading during mash, cooling or equipment checks and its probe suits the vessel.

SpecificationPublished value
Measurement range−50 to 300 °C
Stated accuracy±0.3 °C from −20 to 120 °C
Response time1 second
SensorType K thermocouple
Ingress ratingIP67

Check before choosing

  • The stated ±0.3 °C applies from −20 to 120 °C; accuracy changes outside that range.
  • A fast sensor still needs correct insertion depth, placement and enough time to stabilise.
  • IP67 describes enclosure protection under a standard; it does not replace cleaning and use instructions.

General ingredient and container weighing

KD-8000 scale

My Weigh

Your vessel plus ingredient stays below 8 kg and whole-gram display steps are suitable for the decision.

SpecificationPublished value
Maximum capacity8,000 g
Readability1 g Readability is the displayed increment, not stated accuracy.
Listed unitskg, g, lb:oz, lb, oz

Check before choosing

  • The container counts toward capacity even after tare.
  • The manual identifies air currents, vibration, temperature and nearby electronics as possible influences.
  • An 8,000 g × 1 g capacity/readability statement does not itself establish accuracy at every load.

Small ingredient portions

SM-501 digital pocket scale

American Weigh Scales

You need finer displayed increments for small additions and the container plus ingredient stays below 500 g.

SpecificationPublished value
Maximum capacity500 g
Readability0.01 g The smallest display step is not a complete accuracy claim.
Calibration mass500 g; not included
Listed operating range10–30 °C

Check before choosing

  • The listed 0.01 g readability does not guarantee ±0.01 g accuracy.
  • The listed 500 g calibration mass is not included.
  • Test repeatability at the loads you actually use; do not infer laboratory performance from display digits.

Thermometer check

Use a documented reference method.

  1. Follow the maker’s ice-point or calibration instructions rather than improvising a cup of ice.
  2. Record reference conditions, probe position, stabilisation time and five readings.
  3. Compare the observed spread with the maker’s stated tolerance for that temperature.
  4. Do not adjust a device unless its instructions provide that procedure.

Scale check

Test zero, repeatability and load position.

  1. Level the scale in its normal location and let it reach the specified operating conditions.
  2. Use a suitable traceable or manufacturer-specified reference mass; household objects are not calibration standards.
  3. Record five load/remove/reload cycles and repeat near the masses used in recipes.
  4. Check centre and permitted off-centre positions without exceeding capacity.
