Rum / Shake

Daiquiri

Three ingredients, one lesson in balancing a sour: spirit, citrus and sweetness.

Ingredients

  • white Cuban rum60 ml
  • fresh lime juice20 ml
  • superfine sugar2 bar spoons

Quantities scale proportionally. Ice, garnish and “to top” amounts depend on the glass. Prepare individual portions when a shaker or mixing glass cannot hold the full batch.

Garnish: No garnish required.

Method

    Combine the rum, lime and sugar in a shaker. Stir until the sugar has dissolved.

    Add ice, close the shaker and shake.

  3. 3

    Strain into a chilled cocktail glass.

Sugar changes perceived acidity without removing the acid. Keeping the lime quantity constant lets you explore that relationship in a simulator.

Watch for this

A common mistake

Undissolved sugar leaves a gritty texture and an uneven result. Dissolve it before adding ice.
