Mojito

A lesson in handling herbs gently and adding carbonation at the end.

Ingredients

  • white Cuban rum45 ml
  • fresh lime juice20 ml
  • mint6 sprigs
  • white cane sugar2 tsp
  • soda water to top

Quantities scale proportionally. Ice, garnish and “to top” amounts depend on the glass. Prepare individual portions when a shaker or mixing glass cannot hold the full batch.

Garnish: Mint sprig and a lime slice.

Method

    Gently work the mint with the sugar and lime juice in a tall glass.

    Add a small splash of soda and ice.

  3. 3

    Pour in the rum, top with soda and stir lightly to combine.

Carbonation changes aroma release and texture. Vigorous mixing after adding soda loses some of that effect.

Watch for this

A common mistake

Grinding mint into tiny pieces changes the texture. A gentle press releases aroma without shredding the leaves.
